Would taking a Human Sexuality course at UVU be considered a sin if I'm unmarried and single? Wanting to take it because I am largely in the dark about all of that stuff, or is that a good thing that I am?

If the class involves having sex with someone other than your married spouse, then yes, it would be a sin.

Otherwise, no.

There is no commandment against learning.

A lot of people seem worried that knowing anything at all about sex before your wedding night is wrong, as if a virtuous person must also be ignorant. But as Yellow pointed out, there's no commandment against learning. (Even if you're neither engaged nor dating.)
