Dear Alacritas,

So this recipe comes from one of my Brazilian friends. I'm so glad she taught me because I love Brazilian beans and rice so much. Here are the ingredients:

2 1 lb. bags of black beans

1-2 smoked kielbasa chopped

1 package bacon chopped

1 onion chopped

1 bundle of parsley chopped

1 bundle of green onion chopped

1-2 tablespoons of minced garlic

3-4 tablespoons of salt (this seems like a lot, but I know Brazilians that put even more salt. You can dial it back a bit if you really want)

1 tablespoon black pepper

1 tablespoon cumin

1 tablespoon coriander

1 teaspoon of cayenne pepper (you can add more, but Brazilians typically don't make this spicy)

10-20 bay leafs

Enough water to cover everything by about two inches

This makes enough to fill two pressure cookers, so if you want less just half all of the ingredients. The preparation is really simple. You chop everything that needs to be chopped, put all the ingredients in a pressure cooker, cover with water, and then cook until it's done. When I made it in an instapot it took around an hour, but your cooking time may vary by about 10-15 minutes. Serve on top of rice and you have yourself some delicious beans and rice!

The best part about this recipe is that it makes about 20+ servings and it freezes really well. So this is great if you want to do some meal prepping. Good luck and happy cooking!
